Thinking of what to make for breakfast this morning. Probably going with fried eggs, because that's my go-to. Edit: Went with fried eggs, tasted okay. Didn't think to take a picture, but honestly they didn't look too good. Should have greased the pan more.

I made a Spaghetti Pie recently and took a picture of it. What it looks like when its cut is really blurry, so here's an image from when it's not cut -

A delicious baked spaghetti dinner with a layer of parmesan cheese and basil noodles, topped with cottage cheese and spaghetti sauce.

Ingredients
  • 8 ounces spaghetti noodles
  • 1 cup freshly grated parmesan cheese
  • 1/4 cup fresh basil leaves , chopped
  • 3 Tablespoons butter
  • 1 large egg
  • salt and freshly ground black pepper , to taste
  • 1 cup cottage cheese
  • 1 1/2 cups marinara pasta sauce , homemade or a 12 oz. jar
Instructions
  1. Lightly grease a deep 9'' or 10'' pie plate with cooking spray.
  2. Cook spaghetti noodles according to package directions. Drain, and add hot noodles to a large bowl.
  3. In a small bowl, beat the egg. Add the butter and the hot pasta. Toss until butter is melted.
  4. Add parmesan cheese, basil, and a little salt and pepper and toss everything gently to combine.
  5. Empty pasta mixture into prepared pie pan and pat down tight.
  6. Spread cottage cheese evenly over the top of the pasta.
  7. Spoon your favorite spaghetti sauce over top and smooth into an even layer.
  8. Bake at 350 degrees F for 20 minutes.
  9. Allow to cool for 5-10 minutes before slicing into wedges and serving.
Recipe Notes
*You can substitute ricotta cheese for the cottage cheese.
*This recipe fits a deep dish pie pan. If you don't have a deep dish pie pan than I would suggest making this in an 8x8'' square (or similar size) casserole dish.

Welcome, welcome everyone! It makes me so happy to see so many people express interest in this little idea I had. I hope you all have a good stay here. In keeping with the running theme so far of pasta related entries, I figured I would share my own recipe for baked macaroni and cheese.

Ingredients:
  • 4 tablespoons of butter
  • 4 tablespoons of flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of milk
  • 1 cup of cream
  • 2 cups of shredded cheese
  • 1/2 cup of bread crumbs
  • 8 ounces of cooked macaroni
Substitutions:
  • 2 cups of milk can be used instead of 1 cup each of milk and cream
  • Butter or cheese crackers such as Ritz or Goldfish can be used instead of breadcrumbs
Steps:
  1. Melt butter in sauce pan.
  2. Add flour, salt and pepper. Stir constantly. Add milk and cream.
  3. Bring to a boil for 2 minutes.
  4. Reduce heat and cook for 10 minutes, stir constantly.
  5. While stirring, apply butter to a baking dish and preheat your oven to 400 degrees F.
  6. Add cheese.
  7. When cheese is melted, combine with macaroni in buttered baking dish.
  8. Coat macaroni with the cheese mixture
  9. Top with bread crumbs
  10. Bake in oven at 400 degrees F for 20 minutes.

It's been a while since I've written a recipe and I'm copying from a card my father wrote for me, so I apologize if anything is unclear.

I hope it's not weird that I start drooling a bit whenever I open this thread?

As of right now, I still have a meal plan that I can use at the dining halls. Next year I'll be a lot more on my own for food, and while part of that is scary, I'm pretty excited at the prospect of teaching myself how to cook.

I don't have the motivation to cook a lot while at uni which sucks because I enjoy it, but I'm very excited to learn recipes and tips from all of you!
@The Griddler I don't like mac n' cheese much but damn I'd definitely give that recipe a shot, never had proper homemade mac n' cheese before after all. I feel as though it would depend on how rich the cheese used is but I think maybe if you made breadcrumbs from something a bit sweet, like graham crackers maybe (we dont have em in the UK and I dunno what our equivalent is), that could be a nice substitute too.

Cinnamon Roll Pancakes

Serves 8 – 10

Prep Time: 10 Minutes

Total Time: 30 Minutes

Ingredients

Pancake batter:

• ⁠1½ cups all-purpose flour
• ⁠1 Tablespoon baking powder
• ⁠3 Tablespoons granulated sugar
• ⁠¼ teaspoon salt
• ⁠1 egg
• ⁠1 cup milk
• ⁠1 teaspoon pure vanilla extract

Cinnamon Filling:

• ⁠6 Tablespoons unsalted butter, melted
• ⁠¾ cup brown sugar, packed
• ⁠1½ Tablespoons ground cinnamon

Cream Cheese Glaze:

• ⁠¼ cup unsalted butter, room temperature
• ⁠2 ounces cream cheese, room temperature
• ⁠¾ cup powdered sugar
• ⁠½ teaspoon pure vanilla extract
• ⁠2-3 Tablespoons milk

Preparation

  1. ⁠Make the pancake batter: in a medium bowl, whisk together the flour, baking powder, sugar, and salt. Add the egg, milk, and vanilla, extract and mix until the batter is fully blended.
  2. ⁠Make the cinnamon swirl filling: in a small bowl, combine the melted butter, brown sugar and cinnamon. Mix well. Transfer the mixture to a quart-sized resealable plastic bag and set it aside.
  3. ⁠Make the cream cheese glaze: In a medium bowl, beat together the butter and cream cheese until the mixture is smooth and creamy. Add the powdered sugar and vanilla, and continue to beat until it’s fully mixed and no lumps remain. Add enough milk to thin the glaze to your desired consistency, and set it aside.
  4. ⁠Preheat a large skillet or griddle to medium-low heat. Spray the preheated griddle with pan spray, and wipe away any excess. Pour ½ cup of the pancake batter onto the prepared griddle.
  5. ⁠Twist the top of the bag containing the cinnamon filling to force the filling into one corner of the bag and remove any trapped air. Then snip the corner of the bag to create a small hole, and squeeze the bag to pipe a swirl of the cinnamon filling onto the center of each pancake.
  6. ⁠When the batter begins to bubble, the pancake is ready to be flipped. Flip the pancake and cook it for an additional 1-2 minutes, or until the bottom side is golden brown. Keep the pancakes warm in a low oven or on a plate covered with aluminum foil while preparing the remaining pancakes.
  7. ⁠Drizzle the cream cheese glaze over the warm pancakes and serve.
