This thread got me inspired to do some cooking today, so I made burgers and mac-and-cheese for dinner! Pic is here, the forum isn't cooperating with it.
Ingredients
  • 1½ lb ground beef
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Onion powder to taste
  • Soy sauce
  • Bread or buns
  • Cheese, toppings and condiments of your choice
Cooking
  • Preheat oven to 350 degrees
  • Shape beef into four patties and season with salt, pepper, onion powder, and garlic powder
  • Place patties in frying pan, pouring soy sauce over top when they begin sizzling
  • Fry each side on high for 2 minutes each (this cooks the outside and seals in the juices)
  • Transfer patties to a baking sheet and bake for 20 minutes on center rack
  • After 20 minutes are up, remove from oven and place any cheese on top of the patties; whether or not cheese has been added, return to oven for 3-5 minutes
  • Remove from oven, put patties between buns or slices of bread, with chosen toppings and condiments (if any)
Ingredients
  • 1 lb box dry pasta noodles (I prefer shells, but it's really up to you)
  • 3 cups shredded sharp cheddar cheese (other cheeses can be used if you want, but should be mostly sharp cheddar)
  • Salt and pepper to taste
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk
Cooking
  • Cook noodles according to instructions on packaging
  • Melt butter in a saucepan over medium heat
  • Stir flour in 1 tbsp at a time, mixing well to avoid having big chunks of flour
  • Cook for a minute or two, stirring constantly
  • Slowly add and stir in the milk a bit at a time (the sauce will smoothen out as you stir, thicken, and boil)
  • Cook over low heat for 3-5 minutes, continuing to stir
  • Add cheese one cup at a time, stirring well to make sure it’s all mixed in
  • Add cheese sauce to drained noodles, stirring together

I've had such unhealthy comfort food today.
Do tell- its surprising sometimes to see how different everyone's version of comfort food is.
I'd easily say mine is cookie dough, god, how is something uncooked just as good as something that's fully baked? Who cares! A dessert restaurant near me sells loads of hot cookie dough and god it is incredible.

Being in this club is also getting me excited to cook again this summer. I've been saving videos and bookmarking websites with recipes I want to try so having the cookbook in this group is just gonna add fuel to the fire. Naturally any of y'all's recipes I try i'll be sure to post pictures!

So talking about it in my AMA reminded me that I was going to share my crustless chocolate macaroon pie recipe on here once I made the club. I'll go ahead and do that now, although I don't have any pictures to share of it.

Ingredients:
  • 3 squares Baker's unsweetened chocolate
  • 1/2 cup of butter
  • 3 eggs
  • 3/4 cup of sugar
  • 1/2 cup of flour
  • 1 teaspoon of vanilla
  • 1/2 can of sweetened condensed milk
  • 2 2/3 cups of shredded coconut
Optional:
  • Chocolate chips can be added along with the coconut for even more chocolate flavour and a pleasant chunkiness to the texture. I'm sure other ingredients like nuts or chocolate candies could be added too, but I've never made the attempt.
Steps:
  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch pie plate.
  3. Melt butter and chocolate in microwave (1 to 1.5 minutes should do it.)
  4. Mix the butter and chocolate mixture, ensure there are no lumps of chocolate remaining.
  5. Add chocolate mixture to bowl with sugar and flour.
  6. Combine eggs and vanilla, mix until liquid.
  7. Add the eggs and vanilla to the bowl.
  8. Stir the mixture until it is fully combined, there will be air bubbles but there should be no lumps.
  9. Pour the batter into the pie plate.
  10. Combine sweetened condensed milk and coconut together until the coconut is consistently coated (no dry lumps of coconut).
  11. Spoon the coconut mix over the chocolate batter. (Or just use your hands and place it over the batter.) Leave a border about half an inch to an inch thick around the edge of the pan.
  12. Bake for 30 minutes. Consider putting your pie plate on a baking sheet in case of it spilling over.
  13. Let sit and cool before serving.

Something important I want to note about the recipe: unless you have something else on the go that can use your leftover condensed milk, you should always make two pies separately. Don't try and double up the recipe to make both pies simultaneously. My whole family has tried that and it just doesn't work for god knows what reason.

Oh my lord Griddle that sounds incredible! It gets points for not only being a delicious dessert pie, but also all my family hates coconuts so if I make it nobody's gonna eat it while I'm not looking!

Ha! That's a big mood. I'll need to see if I can scrounge up another recipe for you that uses half a can on sweetened condensed milk, as like I said, it's a pretty dense pie and you're probably not gonna want to polish off two on your own. (To say nothing of how bad for you that'd be.) I do have one for a chocolate caramel bar, but it... also has coconut in it. So, one step forward, two steps back.

That looks so good. I used to dislike strawberries but I eventually came around to them. Love cake of any sort, but especially cheese cake.

Those cheesecake brownies look delicious! I really like cheesecake tbh, so cheesecake brownies sound like they'd be right up my alley! I also like strawberries, but I wonder if it'd be just as good with any other fruit.

So I did a thing yesterday. It sounds stupid but I convinced one other guy to try it too and he said it wasn't that bad. Very simply, I threw some Kraft mac and cheese on my PBJ sandwich, and it worked pretty well. The jelly was strawberry, I don't know if that's important. I couldn't taste much of the mac and cheese, honestly, but it added a textural component at least.

Carbs, carbs and more carbs - a lot of potato chips and rice/pasta-based dishes. And since it's easter, quite a bit more chocolate than I usually have.

I'm glad I'm not the only one who adds peppers to their taco meat! I thought it was just a thing my fam did, haha. We also add onions sometimes though, but peppers are always in there.
I don't always put them in there but I've been making a conscious effort to be more responsible with what I cook for myself. My family often puts peppers, onions and carrots in our taco meat for flavour, texture and just that bit of healthiness it gives. I didn't have any onions or carrots so I just decided to dice up three whole peppers and throw them in there.
